Baked Lime Cheesecake

This recipe is touted as 'Gourmet on a Shoestring' and well, it sure was cheap to make and it sure was yummy!

Baked Lime Cheesecake
200g digestive biscuits
1T Caster Sugar
100g unsalted butter, melted
4 eggs, lightly beaten
395g can of sweetened condensed milk
1/2 cup thickened cream
4 limes, zest finely grated and juiced (1/2 cup juice)

1. Preheat the oven to 170 degrees celcius. Grease and line the base of a 22cm spring form pan with baking paper.

2. Place the biscuits in a food processor and process until fine.

3. Add the sugar and melted butter and process until combined. Press the mixture firmly into the base and about halfway up the side of the tin. Refrigerate while making the filling.

4. Whisk beaten eggs, condensed milk, cream, lime zest and juice until smooth.

5. Pour filling into the crust . Bake for 40 mins or until filling is just set.

6. Allow to cool and refrigerate for at least 2 hours before eating.
