Chicken Cacciatore - Slow cooker
2T olive oil
500g chicken, bone in
1 large onion, chopped
2 cloves of garlic sliced very thinly
1/3 cup dry white wine
2 cups canned crushed tomatoes
1t salt
1/2t black ground pepper
1T parsley, chopped
You can also add in mushrooms, jalapeno, capsicum, whatever tickles your fancy really. Someone in my household (not me!) likes things a little bland, hence we keep it very low key in our house.
In a large pan over medium heat, brown the chicken, onion and garlic in the olive oil.
Combine the chicken and pan drippings with the remaining ingredients, except the parsley, salt and pepper and place all in the slow cooker.
Cover and set cooker to Auto or low. The chicken will be done in 7 - 8 hours.
4. Season with salt and black pepper to taste. Stir in the parley before serving.
