Best Chocolate Chip Cookies ever

I'm not even joking you guys. These are incredible. I ate about 57 of them in the space of half an hour and they're SO easy to make - all in one bowl. The best part - they can be in your mouth in less than half an hour all up, (pro-tip) they can be in there in less than 10 minutes if you keep a batch whipped up in your freezer.

Tasty Tuesday - That's why they say that I'm Tasty... I'm back, I'm back.


This crock pot honey mustard chicken was yummy! Even given the seal of approval by the one year old AND the four year old! I'll definitely be making it again.

Sweet Garlic Chicken was really easy and quite yummy. I love a good chicken breast meal and this was one of those.

And next I have a couple of slices to share. My workmates, as usual, have been delighted by these goodies on Friday morning tea. Slices are so easy to make and are real 'bang for your buck', these two don't disappoint.

 Hedgehog Slice

 250g plain biscuits, broken into small pieces
1/2 cup coconut
1/2 cup caster sugar
1/2 cup chopped nuts
1/4 cup cocoa powder
100g dark chocolate, chopped
100g butter
1T golden syrup
1 egg, beaten lightly

Chocolate topping:
200g dark chocolate
50g butter

1. Grease slice pan, line base and two long sides with baking paper.
2. Combine biscuits, coconut, sugar, nuts and cocoa in large bowl.
3. Stir chocolate, butter and syrup together in a small saucepan over low heat for 4-5 minutes or until mixture is melted and well combined. Cool slightly. Add egg. Stir chocolate mixture into dry ingredients.
4. Press mixture firmly into pan using a fork: refrigerate 30 minutes or until firm.
5. Make chocolate topping: spread over chilled slice. Refrigerate for 45 minutes or until set.
6. Before serving, cut slab into squares with a hot knife. Store chilled in an airtight container.

To make chocolate topping - melt chocolate and butter in heatproof bowl over saucepan of simmering water.

Chocolate Honeycomb Slice
1/2 cup sweetened condensed milk
100g butter
200g plain sweet biscuits, crushed finely
 3x 50g crunchie bars, chopped coarsely
200g milk chocolate, chopped
2t vegetable oil

1. Grease slice pan, line base and two long sides with baking paper.
2. Stir condensed milk and butter in small saucepan over low heat for 2-3 minutes until butter has melted melted and mixture is well combined.
3. Transfer butter mixture to large bowl; stir in crushed biscuits and 2/3 of the chopped crunchie bars. Press firmly into pan using a fork; refrigerate 30 minutes until firm.
4. Stir chocolate and oil in a heatproof bowl over saucepan of simmering water until melted. Pour over slice; sprinkle with remaining crunchie bar. Refrigerate 25 minutes until firm.
5. Using a hot knife, cut slice into squares before serving.

Tasty Tuesday


Some more recipes from my culled cookbooks. I've been surprised at how easy they were. A lot of the recipes I pin are quite complicated and have a tonne of ingredients, but these are simple and mostly use the things I already have in my cupboard or fridge.

I thought I'd do a couple of sweets to start off...

Hazelnut Caramel Slice
200g butter, chopped
1/2 cup cocoa powder
2 cups firmly packed brown sugar
1t vanilla extract
2 eggs, beaten lightly
1 1/2 cups plain flour
200g dark eating chocolate, melted, cooled

Caramel Filling
180g butter, chopped
1/2 cup caster sugar
2T golden syrup
3/4 cup sweetened condensed milk
1 1/4 cups whole hazelnuts, roasted

Preheat oven to moderately slow. Grease 20x30cm pan, line base with two long sides.

Combine butter and cocoa powder in medium saucepan; stir over a low heat until smooth. Add sugar; stir until dissolved. Remove from heat; add vanilla, egg and sifted flour, mix well. Spread mixture into prepared pan. Bake in oven for 20 minutes, cool.

Quickly spread caramel filling (see below) evenly over base; refrigerate at least 30 minutes or until firm. Combine chocolate and oil in small bowl, spread over caramel filling; refrigerate until set.

Caramel Filling
Combine butter, sugar, syrup and condensed milk in medium saucepan; stir over low heat until butter is melted. Increase heat to medium and simmer, stirring about 10 minutes or until mixture is a dark caramel colour. Remove from heat and stir in hazelnuts.





I whacked this next yummy slice together in a morning with two whingy girls hanging off me and it was still yummy. Gotta love anything lemon.

Tangy Lemon Squares
125g butter
1/4 cup icing sugar mixture
1 1/4 cups plain flour
3 eggs
1 cup caster sugar
2t grated lemon rind
1/2 cup lemon juice

Preheat oven to moderate. Grease a 23cm square pan, line base and two opposite sides of pan with baking paper.

Beat butter and icing sugar in a small bowl with electric mixer until smooth. Stir in 1 cup of flour. Press mixture over base of prepared pan. Bake in moderate oven about 15 minutes or until browned lightly.

Place eggs, caster sugar, remaining flour, rind and juice in medium bowl, whisk until combined. Pour egg mixture over hot base. Bake in moderate oven about 20 minutes or until firm. Cool in pan.

Lift slice from pan and cut into pieces. Dust with sifted icing sugar.

Grilled chicken, brie and avocado on ciabatta
2 chicken breast fillets
4 thick slices ciabatta
1/3 cup sweet chilli sauce
50g baby rocket leavevs
100g brie, cut into 4 slices
1 small avocado, sliced thinly

Halve chicken pieces diagonally and slice through each piece horizontally (to make 8 pieces). Cook in heated, oiled grill pan until chicken is browned both sides and cooked through.

Toast bread, both sides in the same grill pan.

Spread half the sauce over toast slices; top with rocket, chicken, cheese then avocado. Drizzle with remaining sauce.

Grilled pork chops with apple and onion plum sauce
2 medium apples
1T olive oil
1 medium red onion, cut into thin wedges
4 pork loin chops
1/2 cup plum sauce
1/4 cup lemon juice
1/2 cup chicken stock

Cut each unpeeled, uncored apple horizontally into four slices. Heat oil in grill pan; cook apple and onion, turning until softened.

Cook chops in heated oiled grill pan until cooked.
Stir sauce, juice and stock into apple mixture, simmer 1 minute.
Serve Pork chops with sauce.

Tasty Tuesday


 It's been a long time coming, but not for lack of recipes to share. I've been going through my plethora of cookbooks and culling some, but not before I try out any recipes I like from them.

I've been trying to take photos of what I've made here and there, but I've either gobbled most of the meals up too quickly, they don't look great (but taste yummy), or have gone south with my dead phone (must learn to back up devices periodically).

So I apologise for the lack of photos of most of these recipes. I really urge you to try them. Both husband and I have enjoyed all the meals, and very much the variety.

Pork chops with baked potatoes
750g potatoes peeled
2T  olive oil
4 large pork chops
125g smoked bacon diced
1 large onion sliced
2 garlic cloves chopped
2t dried oregano
Grated rind and juice of one lemon
250ml chicken stock
salt and pepper

Cut the potatoes into 2.5cm cubes. Heat the oil in an ovenproof frying pan, add the pork chops and cook over a high heat for 1-2 minutes on each side until browned. Remove from the pan with a slotted spoon.

Reduce the heat to medium, add the bacon and onion and cook, stirring, for 3-4 minutes until golden. Add the potatoes, garlic, oregano and lemon ring and stir well. Pour in the stock and lemon juice and season lightly with salt and pepper.

Transfer to a preheated oven, 180 degrees celcius, and bake, uncovered for 20 mins. Arrange the chops on top and bake for a further 20 minutes until the potatoes and pork are cooked through.

Chicken, asparagus and potatoes in garlic cream sauce
500g potatoes, halved lengthways
1t cracked black pepper
1T olive oil
4 single chicken breast fillets
400g asparagus trimmed
6 slices prosciutto, chopped coarsely
1 clove garlic, crushed
1/2 cup dry white wine
300ml cream
2T wholegrain mustard
1/2 cup coarsely chopped fresh chives

Preheat over to hot.

Combine potato, pepper and oil in a large bowl, mix well. Place potato, in single layer, on oiled oven try, roast, uncovered in hot over about 20 minutes or until browned.

Meanwhile heat large lightly oiled fry pan; cook chicken, in batches, until browned both sides. Place chicken, in single layer, on oven tray. Roast, uncovered, in hot oven with potatoes about 10 minutes or until cooked through.

Remove chicken and potato from oven, cover and stand 5 minutes, slice chicken thickly.

Meanwhile, boil, steam or microwave asparagus until just tender, drain. Cover to keep warm.

Cook proscuitto in same frying pan, stirring , until just crisp. Remove from pan and cover to keep warm. Add garlic to pan, cook, stirring over a low heat, until fragrant. Add wine, bring to the boil. Boil, stirring until reduced to about 2 tablespoons. Add mustard and cream, bring to a boil. Boil, stirring until mixture thicken slightly. Stir in chives.

Divide asparagus among plates. top with potato, half of the proscuitto, chicken, sauce, then remaining proscuitto.

Rosemary, brie and sun-dried tomato chicken
30g sun-dried tomatoes
 1T finely chopped fresh rosemary
4 single chicken breasts
60g brie, quartered

Combine tomato and rosemary in a small bowl.

Slit a pocket in one side of each chicken breast. Divide tomato mixture and brie among pockets, secure openings with toothpicks.

Cook on a heated, oiled grill plate until browned both sides and cooked through, cover to keep warm.

Choc-caramel slice
2 cups plain flour
2/3 cup caster sugar
185g butter, melted
1 cup of chopped roasted hazelnuts
200g dark chocolate, chopped
395g can sweetened condensed milk

Preheat oven to 180 degrees celcius. Grease a 20x30cm pan and line base with baking paper with two long sides.

Combine flour, sugar and butter in a large bowl, mix well. Press mixture over base of prepared pan.
Bake slice about 25 mins or until golden brown and firm.

Sprinkle nuts and chocolate over the base. Top evenly with the condensed milk.
Return to the oven and bake for a further 25 mins.

Cool slice in pan, cut into triangles. You can serve with fresh strawberries (if you have em!)

Tasty Tuesday


It's winter and all I want to do is EAT! Comfort food central at the moment at my house. Sauces, gravies, hot things, puddings... naughty eating if you ask me, but so worth it. Nom!

I gave this 'Cookie in a mug' thing a go. I used to make a lot of puddings in a cup - vanilla ones with jam at the bottom when I was a kid. It was my favourite recipe in my 'Edmonds Kids Cook Book'! The ones that I keep seeing popping up all over the internet just seemed so much more elegant though. So I gave one I try. It may have been my skills, but I didn't particularly like it. Luckily it hasn't put this sweet tooth off, and I'll try some more over the winter I'm sure.

I found these Skinny Sour Cream enchiladas absolutely delicious. I don't think there was anything particularly skinny about them but the calorie count on them is lower than your average so I was super satisfied and super happy.

Mr Man was quite upset that I'd used his fancy rum for this Roasted pineapple rum chicken, until he tasted it that is. This was super yummy, if not a teeny weeny bit sweet. It was definitely a nice saucy number to lap up with some dinner rolls. Scrumptious.

And on par with that was this Roasted Mustard Chicken. Nom.

The mince in this taco lettuce wrap recipe was super taste - another thumbs up from Mr. Man! 

This is Pulled Pork currently in the slow cooker getting itself all nice and yummy for tonight. There's no way this is going to be gross. So excited. Gotta love the smell of dinner cooking when you get home from work.

Tasty Tuesday

Another weekly round up of recipes I've used recently. With summer and the warmer weather coming abruptly to an end this week all I've wanted is saucy mince or chicken with crusty bread. My weight loss brain is trying to coax me not to, but it's so hard! The number on the scale is still going down (very slowly) but it's hard to be satisfied with wraps when it's cold and stormy!

This Chicken Parmesan is a healthier version of the dish. It got the thumbs up from the husband which is a big deal in our household.

I'm not a whiz with pasta by any stretch, but this recipe for Caramalized Onion and greek yoghurt was super easy and super tasty.

I think this Mars Bar Brownie recipe has now become my go to brownie recipe. The Mars Bars weren't evident in mine in terms of look when they were ready but the nougart definitely made them that lovely chewy texture that you want - so they have that crunch on the outside and delicious chocolatey chew on the inside. Mmmmm. They went down a treat at work.

I sweetened this Banana Loaf with honey rather than sugar to make it a pretty damn healthy snack - and a delicious one at that!

Which menu do I choose?

This week I had a look into recipes for my 5 course gourmet meal. First I had to find out what a 5 course meal entailed exactly.

I found this out:
Course 1: Soup
Course 2: Entre'
Course 3: Main
Course 4: Pudding
Course 5: Cheeses

Which gave me a decision to make. We don't really like soup and I wasn't really fussed on the cheeses as it was putting together produce rather than doing anything technical with food. I was either chucking out the 5 course idea in lieu of a 3 course meal, or changing up the courses somewhat. I decided on the latter.

I've come up with 2 menu ideas. Mostly because I really want to do the beef wellington, but my husband (who I'll be cooking for) doesn't do mushrooms (idiot).

So, I'm asking, which should I do? Which do you like. Do you like them as a whole or should I swap one out for something else?

Tasty Tuesday

Rather than have Tasty Tuesday as a weekly feature it is just sort of coming up whenever I have recipes to post. Who would have thought that life with 2 kids under 4 was hectic? Not as many new recipes as I normally like to be making, but now and then I squeeze some in.

This week we had a new dinner recipe that we'll be having again and again during winter. It was Rustic Chicken with Garlic Gravy. It was super easy to make and with a loaf of crusty bread it was an absolute winner. YUM!

I'm wanting to get to using my crock pot again, especially in the winter (2 kids under 4 remember?) and this was a nice start. Slow cooker Fajitas, a delicious variation of chicken wraps. A bit toooooo capsicummy for my liking, but great none-the-less.

My naughty husband doesn't eat seafood so unfortunately I had to make these Bang Bang Tacos with chicken. Fortunately though, they were super yummy! Another addition to our weekly menus.

I love enchiladas. So I had to try this enchilada cassarole. I made it with standard salsa, and it was still delicious.

Tasty Tuesday


It's been a while between Tasty Tuesdays, mostly because I haven't been doing anything amazing in the kitchen. But thinking about it, I should really share what I've found amazing over the last few months....more to come.

But first!

A few weeks ago we had these Skinny Thai Meatballs and they were delicious!

Tomorrow my mum is coming over for dinner. I'm going to attempt the Stuffed Pork Tenderloin from this post (Uhhh, YUM!) and this decadent dish for dessert (DOUBLE YUM!)

Now, I haven't really been doing anything new in the kitchen lately for a few reasons...
One being that it's been a hectic few weeks and we've either been out a lot or too exhausted to cook anything new or exciting so we go back to the same old, tried and true dishes. The other main reason is that many of our current recipes come from the 'Fit Girl' Cookbooks.

They're great! But I can't share any with you on here because they're all from paid for cookbooks...or can I? What I can do is promote the books here, because they're amaaaze balls in terms of motivation (and just for a bit of a giggle) and tell you our favourite meals thus far.

There are currently 3 cookbooks - 28 Day Jumpstart, Fitkini Body Challenge and The Fit Girls Cookbook Our faves are the Sweet potato wraps and blueberry pancakes. My personal favourite are the pizzas. I can attribute the sentiment behind these books (which is clean eating and being active basically) to my 17kg weight loss. Thoroughly recommend. :)

Tasty Tuesday


I made this Snickerdoodle apple bread in the weekend and it's delicious. I even made it with almond milk and wholemeal flour and it's still tops! My husband grumbled about the crunchy, sugary top, but I loved it! Nom.

Brown Sugar Chicken is what's for dinner tomorrow tonight. YUM! Looks great doesn't it. Verdict in next week's Tasty Tuesday post.

Tasty Tuesday

These Candied bacon and choc chip cookies were strange. Both my husband and I commented that the bacon wasn't really noticable in them. They were gobbled up none-the-less.

The flavour in these Zucchini Fritters was amazing, even though I'm hopeless at making fritters and they never seem to turn out right!

These Dill Chicken Skewers were super dooper easy and super dooper yummy. Will definitely make again.

I'm amazed at the moment with the change in our diet and lifestyle how much I taste food. I used to like food before (clearly!) and now I still love it, I just appreciate it in a different, and what I feel is a better way.

Tasty Tuesday



I'm making the most of my husbands work crew while I can. He's recently secured a new job where it will just be him and one other so if I send in baking it'll take them weeks to eat it! I thought I'd give my work mates a break from the sugar while I can and send this week's creation into hubby's work.

It was a Triple Chocolate Cheesecake with Oreo Base which I found on omgchocolatedesserts.com.



I did ask Damien to send me a photo of a slice, he forgot, and instead sent me this. I think it was well received.

Tasty Tuesday - Getting rid of my baking


This healthy eating thing is great, don't get me wrong, but my love of baking has taken a bit hit since I began. This is because I don't want rouge sugar laden goodies hanging out in my fridge and pantry for Damien and I to devour. Out of sight, out of mind. The problem being that I really miss it. The baking that is (OK, and eating it too) and I want to continue to refine my baking skills. 

So because of this my poor workmates are being targetted.  I informed them this week that I need them to help me continue my good blogging of recipes and eat these sugar laden goodies. They were most upset... not. It's good because 1) I still get the make the things, 2) I'm even able to have a weeny bit and a taste and 3) it makes those around me larger thus making me look thinner.... right? Lol.


This week's sugar laden goodie comes to us courtesy of a site entitled 'Chocolate and more' so you know it's good for you. I made these delicious Turtle bars which are super easy to slap together and (the reports back tell me) are absolutely delicious (just kidding, of course I tried it! Tasty Tuesday

Man has it been a busy week or two (ten?!?) I've been living the busy life. So much so that I've been unable to blog about it! I have been making some scrummy food to share with you though. Two pretty good recipes today and one totally naught (Read: delicious) one.

Let's start with the naughty but delicious number. For my birthday I ate cake! And because I made this exception to have a treat I had to make the best cake ever, and I think I nailed it! I googled the phrase 'best chocolate cake ever' and this link from 'Add a pinch' was the first hit. Man it delivered. Yum! I even made it with relatively healthy ingredients (bar the TWO cups of sugar), substituting white flour for wholemeal and using coconut oil. Was very decadent.

Next, a sweet treat that you can eat pretty much every day based on it's low calorie count and with a good balanced diet it's a great snack. My husband LOVES these muffins.

And last but not least a super yummy lunch meal that is so super easy to make. My friends from university and I catch up every school holidays. We each bring a plate (or two) of food and have a wee korero. This slice is often bought by another friend and I just have to share the recipe because it is just that good. We love lunch cake!

Courgette Slice (Lunch cake!)
1T Olive oil
1 onion finely diced
2 rashers of bacon
5 cups of grated courgette (around 4 medium sized ones)
1/2 cup cheese (tasty is good)
3/4 cup self raising flour
4 eggs
1/2 cup plain oil
Salt and pepper to taste

1. Preheat the oven to 180 degrees celcius and line a 25x17cm baking dish.

2. Heat the olive oil in a pan and saute the onion and bacon until the onions are golden and the bacon is crispy.

3. Squeeze any excess moisture from the courgettes.

4. In a large bowl combine the courgettes, cheese and flour.

5. In a separate bowl beat together the eggs , oil and seasoning.

6. Combine all 3 mixtures and mix together well.

7. Spoon into baking dish and bake in the oven for 20-25 minutes until golden and set. Set aside to cool for 10 minutes before cutting.

Tasty Tuesday

Tasty Tuesday has fallen off a bit of late - over Christmas I was far too busy and now we're mostly eating the same thing every day while we're trying to lose weight - albeit yummy stuff.

I have two recipes that I made over the past few weeks, one for a Chirstmas party that went down a treat - veeeeery sweet though. I'll start with those.

I made these Mars bar balls to accompany a cheesecake. Pretty basic. They reminded me of the marshmallow balls everyone makes with coconut on them. Such a simple recipe that could be recreated with so many different fillings and coatings. AND super easy!

The 'bang bang' in Bang Bang Chicken comes from the kick in the sauce I think. I enjoyed it. We made ours shallow fried rather than deep fried and I feel they lost some of their charm because of it, but we scoffed it down none the less!

That's all for today. I play to write about our fit food revolution in the next little while, so keep an eye out for that. The weight is falling off me, I have heaps of energy and I'm not even hungry. Oh, and I'm super proud of myself too.

I'm glad I can keep this post. Even though I've been super busy with other things (but still thinking about blog posts and things to write about when I get a chance... as well as ticking along with goal stuff) I'm stil trying out new recipes (:

Mr Man loved this Parmesan Crusted Chicken Breast.

Leah thought these Cauliflower tots were just tops, and I found like a good mum serving them up.

And absolutely everyone loved this Spaghetti Bake - Me, Damien, Leah and Jake. Thumbs up all round.

Tasty Tuesday

I have been blogging MIA again. Having a little think about things and severely immersed in doing some work at home days. But this post is always an easy one so can't leave it.

Tonight we had Cheesy BBQ Chicken Bacon Buns. They were yummy and the best part is that they're done in the slow cooker!

This was an easy peasy pasta bake...nothing special though.

My husband will kill me if I don't make these chicken mince lettuce wraps again. I had no soy sauce in the house so used hoisin and he hasn't stopped talking about hoisin sauce since. The man is obsessed.

These Taquitos didn't turn out great, but I really liked them cold the next day - funny how some foods taste better the day after.

Tasty Tuesday


Really enjoying trying a lot of new dinner recipes recently. I also had a lovely lunch out at a friends house and was designated to bring sweet treats, so tried a couple of newbies there too! A productive week, here's what we had.

I personally am really digging chicken at the moment, hell, who am I kidding - all the time. With our home made burgers, although we often change up the proteins, we always pile the same stuff on - cheese, bacon, sauce, egg etc. They're great, but fat laden and there's not much wiggle room for diversity. These Jerk chicken sliders were a start at beginning to branch out here. Although Damien and I both gave the chicken a thumbs up, neither of us liked the salsa. Back to the drawing board.


We made an avocado chicken salad croissant last fortnight and really liked it, but as per usual, we thought it could have done with some bacon. And then I came across this Chicken and Bacon Salad recipe. Voila. We enjoyed it a lot more. It's particularly important to note that I (Yes me!) exclaimed how much I liked the celery in the salad. Me, like celery. Holy hell, that's saying something.

These Mini Snickers Cheesecakes were a hit everywhere I palmed them off to. So happy with my bake and palm off regime that's  taken off.

And I must report that I have made Red Velvet Cake many times but the recipe for these Red Velvet Whoopie Pies will be one I use over and over again. Was delish.

Tasty Tuesday - A week in recipes


Another week of using recipes off my pinterest boards. Feels good to be using them finally (I had a tonne of recipe magazines to get through first ...I am the queen of consumption!)

Like I've said previously, I will mostly be sharing savoury, dinner type meals for the next while as I'm trying my best not to make too many sweet treats. It's going well at the moment and my healthy lifestyle is taking fight :) In saying that, cheat day this week saw the yummy first recipe made (and most frozen for when I can have a treat). I'm learning how to do this moderation thing!

Here are this week's spoils.

Cream cheese chocolate chip cookies. Now, it could be the fact that my sugar intake is a lot smaller nowadays, but these are delicious! So soft and my husband particularly pointed out that they were already yum and then you get hit with a chocolate chip and it's like heaven!

Sweet BBQ Pork Chops. We usually just fry or bake our pork chops so this was a nice change for us, I think the sauce would be nice for chicken too.

Garlic Chicken Strips. These I really loved. With my smaller portions recently, this was a hard one to stick to. I even stuffed up the ratios of breadcrumbs and cheeses and it was still delicious. Will definitely be making again.

Cilantro Thai Grilled Chicken. A nice easy little sauce to go with chicken breast.

Grilled Chicken Cordon Bleu. I really liked the basting sauce used on these, will definitely be using that again!
