Orange and Cinnamon Mousse


Yummy mousse we had for dessert this evening. The ones pictured are lemon, line and cinnamon (just sub out the orange juice for lemon and lime and the orange rind for lemon rind :)).

1/2 cup caster sugar
1/2 cup orange juice
1 cinnamon stick
1T orange rind
3t gelatine
1/4 cup just boiled water
2 egg-whites
300ml thickened cream, lightly whipped
Ground cinnamon & extra orange rind to serve

1. In a small saucepan combine sugar, juice and cinnamon stick. Stir over a medium heat until sugar dissolves.

2. Bring to boil. Reduce heat and simmer, without stirring for 5 minutes. Remove from heat. Stir in rind and transfer to a bowl. Cool to room temp.

3. In a small jug, whisk gelatine briskly into water with a fork until dissolved. Cool to room temp.

4. In a clean, dry bowl, beat egg-whites until soft peaks form. Fold into juice mixture with cream.

5. Spoon into 6x 1/2 cup serving glasses. Cover and chill for 2 hours or overnight, until firm. Dust with cinnamon and top with rind to serve.
